Recipe: Sweet Potato Tofu Stir Fry

There is nothing quite as wonderful as a stir fry of fresh veggies, tofu, and sweet potatoes.  An incredibly filling and nutritious vegan meal, with complete protein and rich in beta carotene!

INGREDIENTS:

  1. One Sweet Potato

  2. 1/3 pkt 16oz Extra Firm Tofu

  3. 1 small Zucchini or Eggplant

  4. 1/4 Green Bell Pepper

  5. 1 Roma Tomato

  6. 1 Green Onion

  7. 1 Handful of Cilantro

  8. 1 Tbs. Olive Oil

  9. Salt, Pepper, Red Pepper

DIRECTIONS:

Skin and slice the sweet potato.  Pour the Olive oil into a larger Cast Iron Dutch Oven.  Sauté the sweet potato on high heat until it just starts to soften, and the exterior just starts to blacken.  While the sweet potato is cooking cut up all other ingredients to bitable size*.  Once the sweet potato is Sautéd correctly, add all other veggies into the cast iron pan or dutch oven and cover.  Cook and stir every five minutes, or so, until all veggies are soft.  Add Salt, Pepper, and Red Pepper to taste, and Enjoy!

*You should know what size your mouth is by now in your life, if you don’t you need to get to know you better.
