Recipe: Rice, Beans, & Squash

Healthy, simple, and cheap meals are truly the way to go in life.  The simplicity alone allows for a much easier time cooking, but also more time to relax or even simply time for whatever your hobby is unless its cooking in which case I suppose maybe more complicated meals are better for you.  This meal is however not for that.  This meal comes in at an amazing 50 minute prep time from raw ingredients to sit down and eat.

Ingredients:

  1. One can of low sodium Black Beans

  2. One Avocado

  3. One cup of Brown Rice

  4. One Butternut Squash

  5. Four tablespoons of Olive Oil

Directions:

Skin and cube the butternut squash.  Toss the cubed squash in the olive oil.  Put the cubed squash on a Baking Sheet, and cook the squash for 50 minutes at 350 degrees.  Bring 2 and 1/2 cups of water to boil in a pot, and then add the brown rice.  Simmer the rice until it is fully cooked and the rice fully absorbs the water.  Open the can of black beans, and wash them with water.  Cut the avocado and garnish the rice and beans with the slices.
